Hainanese Chicken Rice


  • 4 pieces chicken drumsticks
  • Coarse salt
  • 1¼ teaspoons fine sea salt
  • ½ large red onion
  • 4 large cloves garlic
  • ½ thumb ginger, peeled
  • 4 tablespoons oil
  • 2 cups of Beras Cap Udang rice
  • Chicken / vegetable stock
  • ½ tablespoon light soy sauce
  • ½ tablespoon sesame oil
  • Chopped coriander and sliced cucumber, to serve
  • Crispy fried onions (optional)


1. Clean the chicken thoroughly with coarse salt and rinse. Rub in 1 teaspoon fine sea salt and set aside for 30 minutes. Rinse the chicken, drain well and set aside.

2. Blend onion, garlic and ginger together into a paste.

3. Heat oil in a frying pan over medium-high heat. Add in onion mixture and stir-fry till fragrant. Add in rice and stir-fry for a minute until the rice grains are coated in oil.

4. Transfer the rice to a rice cooker. Add in stock, light soy sauce, sesame oil and remaining ¼ teaspoon salt. Add in the chicken drumsticks in one layer, skin side down. Cook rice normally.

5. Once the rice is cooked, keep warm for 15 minutes. Stir to mix the rice and serve. Garnish with coriander, sprinkle fried onions and serve with cucumber.
